Sweet Potato Casserole (9x13, 25-30 minutes, 350º)
3 cups sweet potatoes, cooked and mashed
2/3 cup white sugar
¼ cup butter, softened
1 t vanilla
½ cup milk
2 eggs, beaten
Topping:
1 cup packed brown sugar
½ cup all-purpose flour
1/3 cup butter, softened
½ chopped pecans (or more if you like)

My Great-grandmother's Famous Pecan Pie

1 cup broken pecans
3 eggs
½ cup white sugar
1 cup dark corn syrup
1/8 t salt
1 t vanilla
¼ cup Crisco (melted)
Beat the eggs well. Add sugar and corn syrup, continue to beat. Add salt and vanilla, and add the melted Crisco last and beat well. Place pecans in the bottom of an unbaked pie crust. Pour in the filling (the nuts will rise to the top as it bakes). Bake at 350º for 50-60 minutes. It is done when the pie shakes like pudding.
